Baked Potato Soup.
O........M........Goodness.
I don't even like Potato Soup and this stuff is soooooooooo good!!! It's a crock pot recipe so other than the basic prep it is super easy.
Ingredients:
6 (ish...I usually use closer to 10 if they are small) Potatoes, peeled and diced (big hunks is fine)
1 onion, chopped
1 can Cream of Chicken Soup
3 Cups Water
1 tsp. salt
1/2 tsp. pepper
1 tsp. Onion Powder
1 tsp. Garlic Powder
1/2 tsp. Basil
1/3 Cup Sour Cream (or plain Greek Yogurt)
1/2 block cream cheese (cut into chunks)
2 Chicken Bouillon Cubes
Toppings: Bacon, Shredded Cheddar Cheese, Sour Cream, Chives
Directions:
1. In a bowl, mix together the soup, sour cream, water, salt, pepper, onion powder, garlic powder and basil. Set aside.
2. Peel dice potatoes. Chop onions (Oh, ninja...how did I ever do this without you!). Dice Cream cheese.
3. Place potatoes and onions into the slow cooker.
4. Top with bouillon cubes and cream cheese.
5. Pour soup mixture over top.
6. Cook on low for 8-10 hours or on high for 4-5 hours.
7. Once ready to serve stir well (cream cheese might still need to melt a bit and be incorporated...stirring should easily take care of it). Use a potato masher to thicken the soup up a bit.
8. Top. Consume. Yum.
A note about the onion: I hate onions. As in...I can taste the tiniest onion in the biggest casserole. But I don't mind them in this. First...I use the flattest yellow onion I can find. The flatter it is the milder the taste of it will be. Second...I use my ninja (small chopper dish...) to pretty much puree it. Since the pieces are so little they melt in as it cooks all day and I have no chance of biting into a big hunk!
This is an incredible recipe for a cold winter day. Give it a try!!

January 2013 Menu
Sorry I'm late! I didn't get this done until a few days ago...Winter break flew by and I just ran out of time! Seems like there is never enough, is there? You may notice that we have gone back to eating out on Friday nights. I know that we shouldn't and I know that we would save a decent chunk of change if we didn't...but I'm so tired on Friday nights after a long week and the last thing I want to do is cook. So...we will go out but keep things on the cheap-side...I see lots of Costco hot dogs in our future! And this we will will do our grocery shopping for the weekend and next week while we are out and about.
Anyway...here is what will be prepped and consumed in the Bussan house this month! I usually add a side of veggies with every meal and fruit for dessert. I hope you find something on here for your family!
Again...I try to put links to recipes where I can. I finally figured out bit.ly so all the links look weird and short but will get you to the recipes.
I have shopped on Sunday afternoons in the past but I am going to try to shop on Friday nights this month. The problem with Sunday's is that I tend to make bigger meals and use the slow Cooker on the weekends and I never remember to get the ingredients before the start of the weekend and I hate shopping on Sunday for the following weekends because then the ingredients aren't as fresh. I know, first-world problem, right?

November Menu
Meal planning is something that I really enjoy as long as I do it in advance...like, way in advance. I like to plan 2 months at a time. At a minimum I have to do one month...if I don't then life gets stressful and expensive! By planning that far in advance I can stock up on things as they go on sale and it's easier to make, and stick to, grocery lists. I shop once per week...usually on Sunday. We do not do a left overs night unless we have tons of them...most leftovers are taken for lunches throughout the week.

Monthly Menu Planning - What you need...
I love menu planning. There...I said it. I genuinely love to plan out dinners for a month, or even two months, at a time. It saves me a ton of time and a ton of money. Time? Instead of making multiple trips to the grocery store every week I just make one. Instead of standing in front of the refrigerator and pantry trying to decide what to cook for dinner I can get right down to business. Money? With fewer trips to the grocery store I have less opportunity to make impulse purchases. By only buying what is on my shopping list I am buying only the ingredients that I need and I'm not wasting food. Also...by planning ahead I can space out the "bigger" casseroles and make sure that there are plenty of "fresh" left-overs to take for lunch throughout the week.
So how do I keep it organized?
First, you need a big binder. Make it pretty...it's about to become your friend!
Next, pocket dividers. The number is up to you. I like having one for every month and a few extra. You MUST get the pocket divider...you will be using the front pocket for your menu and the back pocket for your grocery lists.
Next, calendar blanks. I like to use blanks and just write in the numbers. It's faster...I can print out a bunch and keep them in a spare pocket divider at the back of the binder.
Next, a good grocery checklist. I realize that many people may think that this is over-board but I honestly consider it the secret to my success. I can shop for a full week of groceries in under 30 minutes WITH my kid in tow simply by using this checklist. It takes the guess work out of shopping and makes my trips super fast. My list is set up for the grocery store that I use most, Hy-Vee in Madison, WI. When I started shopping there I went into the store with a notebook and wrote things down in the order that I would find them...produce, deli, meat, dairy, frozen (the perimeter) first. Then I went through the rest of the store aisle by aisle and jotted down the regular things that I would buy. Pop in a few extra blanks and *bam* you have a fast checklist to make shopping a cinch. It takes some time to set up but it is worth every second.

Almost there! You need blank dinner pages. You will use these to jot down the quick dinners that you don't need to follow a recipe for. Even though you don't need a recipe these will act as place-holders and they are a handy reference for what you will need when you are filling out your grocery list. A New Look!
Hello bloggie world!
My blog has a new look and hopfully a new life! As the new year approaches I have started thinking about those New Year's Resolutions and along with the old standards (hello, thighs?) I am going to add blogging to my list.
I will still post about what we are eating but I am also going to post about other things that I am passionate about...parenting, organizing, home decorating/ design, crafty fun...
The new title came from a little project tha tI have brewing in my basement...more details to come soon!!!
